Spannocchia, the agricultural estate in Tuscany where I've been conducting classes for the past few years is devoted to diversified, sustainable agriculture using mostly hand labor. In back of the olive orchard is one of the two tractors which help work the 1200 acres of the "tenuta". Behind the tractor is the ancient tower, the villa and many of the attached farm buildings, and behind them are the lovely rolling wooded and open Tuscan Hills near Siena. Now the estate produces woodcuts as well as olive oil and wine, pasta and prosciutto!
